Chef Pascal Hainigue unveils a graphic design for Christmas
For his first Christmas as head Pastry Chef at the Burgundy Paris, Pascal Hainigue has created a graphic Christmas log with a rectangular design, a nod to the work of sculptor César and his original compression art.The Christmas log from the Burgundy Paris is sure to triumph in bringing the traditional festive meal to a stunning finish. The detail in the assembly of the 81 “B”s making up the contours of the dessert produces a 3D effect. Pascal Hainigue has created 9 generous sections for the cut: “Visually, I wanted to highlight the contrast between the different letters by covering 5 of them with gold leaf, adding to the fairy-tale charm of this log”, says the Head Pastry Chef at the Burgundy Paris.
Take a bite, and three flavors combine to create an explosion of taste: yuzu, praline and chocolate. The acidity of the Japanese citrus is offset by the cream, and the floral fruity notes of the 75% Arriba chocolate enhance the pleasure. To add texture the Pastry Chef has incorporated crispy lace crêpes for crunch. Harmonious in terms of texture, color and shape, the Christmas log from the Burgundy Paris bears witness to the elegance and design talent of Chef Pascal Hainigue.
